Oh gosh, not really, we’ve had an excellent couple of weeks (most recently in Tennessee) and I am back in the saddle, kids go back to school tomorrow, and I am FULL OF ANGST. We got back from Tennessee yesterday evening, which is not ideal – usually I like to get home one day before work so that I can get back in the swing, but we REALLY wanted to go to the county fair, and it didn’t open until Saturday, so we couldn’t come home til Sunday. I’m glad we went, it was a great (sweaty, hot, overindulgent) day, but that put us home at 6:30 pm on Sunday evening and that always makes the Monday morning blues hit hard.
Anyhow, it is 8:20 am and I have seven or so meetings today, so must hustle. I shall update on the fair and all the other fun things quite soon, I hope, but for now I’m just setting down the week’s menu so I’ve got it together before I do my instacart order. The Prof and our oldest did not return home with us – they are camping and hiking for another week – so I’m treating myself to grocery delivery. 😉
Firecracker chicken meatballs – didn’t get to these last time around
Chicken and zoodle caprese – we brought home a bunch of giant homegrown zucchini, so this is gonna be a zoodle-heavy menu
Stuffed zucchini – I haven’t made these in a long time, basically taco meat inside a zucchini boat
Instant pot smoked paprika and garlic chicken legs – bc the Prof won’t eat chicken legs and I LOVE THEM SO MUCH. We will likely have this with a side of zucchini (hahahahaaaaa there is so much) and rice
Leftovers from the freezer and/or frozen pizza to round out the week!
