Lil’ Update
A glorious weekend we just had. With Mardi Gras + trip to Nashville + trip to Puerto Rico + trip to NYC (that I just had), I’ve been run off my feet a bit, and am ready to sit tight (for two weeks – before I do three NYC trips in three weeks – god bless my frequent flyer miles). So we stuck close to home all weekend – I got home from an NYC business trip at about 11 pm on Friday, and I don’t think I left the house Saturday except a quick trip to Whole Foods to recycle our Mardi Gras beads and buy a few groceries. Perfect.
Two of our boys got into a public school via the lottery – after years of trying, at last we got some of them in. We’re down to just one in private. We celebrated that good news by finishing up a house-painting project (the Prof) and cooking meals for the week (me). We did go to church today, and I walked while the big boys scootered home – and the Prof followed with Craig in the car. The weather was perfect, just glorious. Then this evening we took another walk to the park, where Jack and I played basketball and the other boys played at the playground. Now, we’re watching Father Brown mysteries and I’m about to do a touch of email clean-up, before starting the week. Just the sort of boring, low-key couple of days I needed.
Last week and this week, we had some good meals, so I’m going to record them here for posterity. Everyone have a great week – at some point, I’ll share some Puerto Rico pics, promise!
Chicken shawarma pitas – I made these last week, and they were really, really good. I didn’t pick up any naan, so we had flour tortillas instead. Also, my sweet potatoes – while tasty – were cut with my spiralizer and kind of a soggy mess. So I googled around and found this article on making crispy sweet potatoes, and I plan to use it next time.
Cottage pie and peas. A fave. I always add worcestershire and hot sauce. I’ve been having the leftovers for lunch for days – yum.
Turkey chili. Good stuff. I put a beer in it and let it boil off, and it was delish.
Chicken caesar salad wraps. We will have these this weeks. I sliced long thing strips of chicken thighs and cooked them in olive oil, and we will toss with romaine, caesar dressing, Parm cheese, and put in a flour tortilla.
Carnitas tacos. We just ate these and my GOD they were good. Instead of tacos, I made them into tostadas. Fried up some corn tortillas, and made stacks with the carnitas, some refried beans, and Mexi cheese.
PW corn chowder – made it today, we’ll heat it up this week. I had neither bacon nor chicken broth, so I made it with beef bone broth, which I did have. We shall see!
Parmesan barley bowls. Here’s hoping the boys eat these.
Sausage and peppers. We have lots of red peppers, so must eat them up! I may roast some as well.
