OK guys, the cupboards are bare. For the past couple weeks I have made random pantry meals using stuff that was around, and I even chipped out the ancient leftovers that have been languishing in the freezer for time immemorial and we ate those the last couple nights. I was too busy working this past weekend to do a full meal plan and shop (and the Prof was away with the biggest kid on a Boy Scout campout), and my kids’ very sad lunches today reflect our pathetic grocery status.
I have a little window of time between worky things right now, so we’re doing Wednesday midday meal planning and I’m blogging about it so the links to my recipes are all collected here. I’m actually starving and that’s never a good time to meal plan or grocery shop, but the Prof is handling lunch preparations as we speak so I should be fed shortly, and hopefully will not faint in a puddle of low blood-sugared misery mid-post. Hope you’re having a good hump day, friends.
Creamy tomato lasagna florentine. I’ve got some spinach and some mozzarella to use up, this will be perfect!
Beef enchiladas but with ground bison instead.
Revisiting this Finnish salmon soup, since I have some homemade fish broth.
Chicken marsala. I love to get out my aggression by pounding a chicken breast flat.
Garlic herb spaghetti with chicken meatballs – lifted from the incomparable meal planner Lag Liv
