A new grocery store has popped up across the street from our ‘local,’ and as a result the ‘local’ has had some crazy deals on the last few weekends. I re-jiggered the weekly meal plan based on the deals on hand – they had 10 chicken leg quarters for $1 (total!), a $1.60 roasting chicken, $1.00 for a half dozen chicken thighs . . . there was a run on all of this, people pushing to grab, elbows flying. Kind of wild. The line was out the door. I suppose the store is achieving its goal of keeping its loyal following, although I fear a stampede one of these days. In any case, I bought all the “too good to be true” deals and then re-configured the meal plan around those, and I’m putting my new list here so I can find the recipes again. Lots of chicken this week:
Skillet steak and wilted kale (we already had the steak in the freezer)
Chicken and black bean chimichangas (I’ll just roast my own $1 chicken instead of getting a rotisserie)
Eve’s chicken quarters with rice and broccoli. This entire meal will be about $3 for all of us!
Peach whisky chicken thighs w/roasted potatoes (already had some potatoes, I think I’ll spend more on peach preserves than all other ingredients combined!)
French lentil soup (this was in our freezer from a double batch I made a few weeks ago, and I had to take it out to make room for all the cheap chicken)
Spaghetti bolognese w/ground turkey (cook ground turkey, add onions and garlic and cook a bit longer, pour in Prego or some other premade sauce, heat through and serve w/spaghetti – I will add some chunks of old tomatoes too)
We’ll try the other new stuff next week, I guess. Let’s hear it for bargain basement deals.
In other news, some good NOLA friends are passing through on their way home from a beach vacation and having brunch at our place this morning, and then after nap we’re going to another friend’s apartment to swim in their complex’s pool. Aside from a short period of time yesterday when the constant presence of the children really began to grate the nerves, it’s been a perfect long weekend.
Now if you’ll excuse me, I must go cook a bunch of chickens. Bawk bawk.
